Οι σπουδές του στην Οπτική και η αγάπη για το νέο έδωσαν το έναυσμα στον Σταύρο Κοή να δημιουργήσει το πρώτο κατάστημά του 1985, στον ισόγειο χώρο του αρχοντικού του. Με πάθος για τη μόδα, λειτουργεί με κυρίαρχο στόχο την αποτελεσματικότερη κάλυψη των αναγκών που αφορούν τα μάτια, τόσο στον ιατρικό όσο και στον αισθητικό τομέα.

Το 2015, η συμπλήρωση 30 χρόνων λειτουργίας βρίσκει τα Kois Optics να παρουσιάζουν τη συλλογή συλλεκτικών γυαλιών ηλίου με έμπνευση από την οροφογραφία του αρχοντικού. Σήμερα, η 10η έκδοση είναι πλέον γεγονός.
